10 Easy, Healthy, & “On the Go” Breakfast Ideas

Mornings are usually the most chaotic time of our day. Someone usually sleeps late, which throws off the entire morning, kids have to get dressed, mama has to put her face on, kids have to eat FAST, and if I’m lucky, I might remember to grab something on the way out of the house.

Breakfast is such an important part of the day. It’s proven that protein rich breakfasts are the fuel for our bodies and minds. Not to mention kids will be less likely to seek sugar throughout the day if they start the day with protein.

Here are 10 super easy or “on the go” breakfast ideas to start the day off on the right & protein-rich foot!

1. Breakfast Oatmeal Cupcakes

Ingredients

  • 5 cups rolled oats
  • 2 1/2 cups over-ripe mashed banana
  • 1 tsp salt
  •  5 tbsp pure maple syrup, agave, or honey instead
  • optional: 2/3 cup mini chocolate chips
  • 2 1/3 cups water
  • 1/4 cup plus 1 tbsp coconut or veg oil
  • 2 1/2 tsp pure vanilla extract
  • optional add-ins: cinnamon, shredded coconut, chopped walnuts, ground flax or wheat germ, raisins or other dried fruit, etc.

Instructions

Preheat oven to 380 F, and line 24-25 cupcake tins. In a large mixing bowl, combine all dry ingredients and stir very well. In a separate bowl, combine and stir all wet ingredients (including banana). Mix wet into dry, then pour into the cupcake liners and bake 21 minutes. I also like to then broil for 1-2 minutes, but it’s optional. (If you let them cool overnight, they’ll no longer stick to the liners.) These oatmeal cakes can be eaten right away, or they can be frozen and reheated for an instant breakfast on a busy day.

2. Banana Pancakes

Ingredients

  • 1 banana
  • 2 eggs
  • 1/2 cup rolled oats
  • 1/4 cup apple sauce
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon

Blend oats in a bullet or blender until oats are ground. Mix all the other ingredients until nice and smooth. Cook on buttered pan. Eat while hot or freeze for later! These are a lifesaver if you’re on the go and in the car!

3. Protein Smoothies

Who knew a fruit smoothie could mimic chocolate? This one does just that without processed sugar! The key is to let your bananas get really ripe, with brown spots all over the peel, and then slice them and freeze them. This one is a favorite any time of day and is super fast and easy to make. Plus you can take it to go in the car and the kids LOVE it! 

  • 4 oz almond milk
  • 1 tablespoon of almond butter
  • 1 teaspoon of cocoa powder
  • 1 cup of frozen banana, sliced
  • 3 dates, pitted 
  • + ½ scoop chocolate Kura Smoothie Powder

The key to this smoothie is the New Zealand dairy sourced protein, where no GMO, free range, and grass fed are the gold standard. Add any fruits or veggies to this awesome protein powder and you and the kids will be good to go with a protein-rich breakfast!

 4. Protein Bars

It doesn’t get any easier than this! When I’m really in a hurry and literally don’t have a minute to spare, I grab a Z Bar for the kids and an EPIC bar for myself!

5. Pumpkin Pie Overnight Oats

Ingredients

  • 1/2 cup unsweetened almond milk
  • 1/4 cup rolled oats
  • 1/4 cup canned pumpkin
  • 1 tablespoon Chia seeds
  • 1/2 tablespoon pure maple syrup
  • 1/2 teaspoon pumpkin pie spice {1/4 teaspoon cinnamon, 1/8 teaspoon ginger, 1/8 teaspoon nutmeg}

Combine all of the ingredients.and mix until fully combined. Place in the refrigerator overnight and enjoy in the morning with a spoon.

6. Applegate Farms

Applegate is a natural and organic meat option that comes in various breakfast sausage options. Convenient, lean protein that you can feel good about. That’s a pretty darn good way to start your day. Their breakfast sausages are also delicious and antibiotic free.

This is an awesome option when you’re in a hurry, but want a breakfast you can feel good about. It takes less than a minute to heat up. Pair it with a piece of toast and almond butter and you and the kids are good to go!

7. Green Machine Juice

Freeze ingredients for green juices (cucumber, celery, carrot, Apple that has been pre-juiced up….) in ice cube trays then put into baggies so you can just grab a baggie, throw it in your bullet or blender with water and some type of green and then I have a green juice that’s about $2.50 vs $8 from JuiceLand.

8. Sweet Potato Bake

Ingredients

  • 12 eggs
  • Coconut oil
  • 3-4 sweet potatoes
  • Salt
  • Pepper
  • Cinnamon

Preheat to 350; grease 9×13 with coconut oil, beat 12 eggs and set aside. Peel & steam 3-4 sweet potatoes and mash into egg mixture with an electric mixer. Add salt, pepper, and cinnamon to taste. Pour into 9×13 and bake 20-30 minutes until brownish on top and does not jiggle in the center. Cut into equal servings and wrap in Saran Wrap to freeze. Pop in microwave 2-3 min and put a little pure maple syrup on top. Yum! This is easy, prepared in advance, and packed with yummy nutrients for the kiddos!

9. Greek Yogurt + Assorted Berries

My kids absolutely love yogurt! It’s one of those breakfast items that’s great paired with something else or stand alone. Fancy it up with some strawberries, blackberries, blueberries, or granola and you’ve got yourself {and the kiddos} a breakfast you can feel good about!

10. Banana Protein Loaf

Ingredients

  • 4 Egg Whites
  • 3 tablespoons Peanut Butter
  • 1 Banana
  • 2 Scoops Vanilla KURA protein Powder
  • 1 cup coconut flour
  • 1 teaspoon baking soda

Mix together and bake at 350 degrees for 18 minutes in a loaf pan. Seriously that’s it.
