Somehow I keep getting stuck with the “special snack” for holiday parties at my son’s preschool. I whined to his teacher earlier this week and she told me to bring Jello for the kid’s Valentine’s Party… Buuuuuuut that didn’t sound very “special”. Geezus, I found myself browsing Pinterest for over a precious hour of my life and finally came up with this idea… Pink Rice Krispie Treats. I can’t screw that up, right?

Wrong! Seriously, y’all… Rice Krispie treats are actually super easy to mess up. Every time I’ve ever made them or supervised their making {Vanessa, remember Lincoln and Caroline’s 2nd Birthday Rice Krispie Treat debacle?}, they never stick together and in end up being a huge marshmallow”y” mess. Which is never actually a REAL problem, because I eat them straight from the pan, but with this project, their stickiness is imperative.

How to make perfectly stuck together Rice Krispie Treats:

  • 3 Tbsp Butter {the real deal… no margerine}
  • 5 Cups of Rice Krispie’s {Don’t go with the 6 cup recommendation from the Rice Krispie’s website}
  • 10 oz package of Marshmallows {I used large, but it doesn’t really matter}
  • Wax Paper
  • 9×13 baking dish

Over super low heat {the lowest setting} I melted the butter. Then added all the marshmallows stirring constantly and mashing the marshmallows to melt more quickly. >>>For Pink Rice Krispie Treats: When the marshmallows were about 75% melted, I added pink food coloring.<<< Once everything was melted I stirred in the Rice Krispie’s and immediately removed from the heat. As soon as it was all stirred and marshmallow mixture was coating the Rice Krispie’s I poured into a wax paper lined baking dish.

I read online a tip to press the mixture tightly into the dish without making a huge mess and it worked to perfection. I got my hands wet with cold water and then pressed the mixture tight into the dish {Apparently marshmallows don’t like to stick to wet cold things}. Let everything cool about 20 minutes.

Pick the wax paper and Rice Krispie Treats out of the baking dish and place on flat surface.

Start cutting into whatever shapes…obviously for the occasion, I chose hearts.

I then got Chocolate Bark {found at HEB in the spices and baking isle}, melted it and covered whatever section of the hearts I wanted and then sprinkled with chocolate.

Voila!

I had originally planned to stick these on a lollipop stick with marshmallows, but I tested it on some scrap pieces and I don’t know what the problem was, but it just wasn’t working. So I settled on wrapping them up “as is” and putting the marshmallows on a stick instead and wrapping those up individually. It all turned out pretty cute!
