Today is pretty straight forward… we’re baking SPINACH CHIPS!!! I’m always trying to come up with new things to eat in the house and after I purchased an almost $7 teenie tiny bag of Kale chips I decided to give it my all and make spinach chips. Our household is avid spinach salad eaters so we always have a plethora of spinach in the fridge. Why not give it a whirl?

Here’s the recipe:

2 Cups Spinach Leaves

1-2 Tablespoons of Olive oil

Sea Salt

Garlic Powder

Pinch of Black Pepper

What You Do:

Dump Your Spinach into a Big Bowl

Pour Olive Oil Over the Leaves

Using Your Hands, Coat the Salad in Olive Oil Making Sure Every Leaf is Generously Coated

Line a Baking Sheet with Parchment Paper

Lay your Spinach on the sheet

Sprinkle with Sea Salt, Garlic Powder, and Black Pepper {I recommend mixing equal parts together and THEN slightly powdering the leaves to ensure you don’t over-season}

Bake in 350 Degree oven for 15 Minutes

Turn off the Oven, but Leave in the oven for another 5 Minutes

Promptly Remove, Cool, and Enjoy!

I’ve got to admit, these little boogers were super fragile…enough for me to never want to make spinach chips again and only use Kale. HOWEVER, they were super yummy, my kid loved them, I loved them… we just needed a spoon to eat them 🙂
