CREAM O’ CHICKEN SOUP!

Here are a few of my favorite recipes using Campbell’s Cream of Chicken Soup for those nights when you’re in a hurry and you’ve been standing in front of your pantry for the last 20 minutes looking for something to cook. Campbell’s cream of chicken soup is a staple item at my house, although I’ve recently discovered an organic, gluten free variety I’m going to try.

1) Poppyseed Chicken:

Boil a pound of chicken over the stove or buy a rotisserie chicken and shred it

Mix together the following in a glass casserole dish (9×9 is best):

  • Chicken
  • 1 can of Cream o’ Chicken Soup
  • 1 small tub of sour cream
  • A helluva lot of poppyseed seasoning

 

Top with a roll of crumbled up Ritz crackers and then drizzle about 1/4 cup melted butter over the top

Bake in the oven at 350 degrees for 20-30 minutes. Serve with dirty rice, green beans, or corn.

2) Chicken Enchiladas

Boil a pound of chicken over the stove or buy a rotisserie chicken and shred it

Mix together:

  • Chicken
  • 1 can Rotel and/or a can of green chiles
  • 1 can Cream o’ chicken soup
  • 1 small tub sour cream
  • Shredded cheese

Spray a 9×13 casserole dish with Pam or pour a few tablespoons of milk in the bottom to create moisture so enchiladas don’t stick. Spread the mixture in tortillas and roll them up and line them in the pan. Mix 1 more can of cream o chicken soup with rotel/chilies and spread across the top of the enchiladas. Top with cheese and bake at 350 degreees for about 30 minutes. Serve with beans or spanish rice. Top with

3) Chicken Spaghetti

Boil a pound of chicken over the stove or buy a rotisserie chicken and shred it

Mix together in a large, oven safe bowl or casserole dish:

  • Cooked spaghetti noodles
  • Chicken
  • 1 can Cream o chicken soup
  • Shredded cheese
  • Season with salt, pepper, onion powder, chili powder or cayenne pepper to taste
  • Chopped onions, mushrooms, celery (all optional)

Top with cheese and bake at 350 degrees for 30 minutes. Serve with garlic bread or a salad.

All of these dishes are great for kids to help with, too! Have your tots empty cans, mix together, season, stir, roll, etc. so they feel like they had a part in the meal and are more likely to eat well at the table.
