Does anyone else have one of those friends that just always seems to have it together? Spotless home, perfectly ironed clothes {even the kids}, dinners that are typically made from scratch, adorable teacher gifts, gorgeous decor, not a hair out of place on her head? You get the drift…

Well I have one of those friends and today I’m sharing her sinfully delicious Pumpkin Chocolate Chip Muffin recipe! I don’t know if she made this up or not, but she shared it with me over the weekend and considering I’m none of the above mentioned and was able to pull it off? Well now… that’s just a WIN!

Pumpkin Chocolate Chip Muffin Recipe

What You Need :: 

  • 1 1/2 Cups – Flour
  • 1 Cup – Sugar
  • 1 Teaspoon – Baking Soda
  • 1 Teaspoon – Cinnamon
  • 1/2 Teaspoon – Ground Cloves
  • 1/4 Teaspoon – All Spice
  • 1/4 Teaspoon – Salt
  • 2 – Eggs, Beaten
  • 1 Cup – Pumpkin
  • 1/2 Cup – Butter, Melted
  • 1 Cup – Chocolate Chips

What You Do ::

  • Mix dry ingredients, set aside.
  • In large bowl, beat eggs. Stir in pumpkin and melted butter.
  • Slowly add in dry ingredients
  • Stir in chocolate chips.
  • Spoon mixture into muffin pan.
    • **trick** Per my friend, I used Baker’s Joy spray {found in the baking aisle} in the muffin tin. If you use this you won’t need muffin liners. They just fall right out of the pan.
  • Bake at 350 degrees for 15 “ish” minutes if you use a mini muffin pan or 20-25 minutes for a regular size muffin pan. Every oven is different…so check on those muffins!!!
