Toddler-Approved Thanksgiving Meals

picky-toddler-approved-thanksgiving-ideasThe picky toddler eater struggle is real y’all. My toddler exists on chicken nuggets, hummus, breast milk and green smoothies (and most days I have to bribe him with Annie’s organic gummies to finish it).

So what’s this Thanksgiving food loving, party hosting, pecan pie-baking mama to do this holiday season? You better believe there will be no chicken nuggets on my Thanksgiving table.

I’ve compiled a list of my five favorite side dishes (ok 4 and one sweet treat!), tweaked them a little bit to make them toddler friendly and added some hidden vegetables so you can feel good about giving them to your little one!

1. Sweet Cornbread Casserole

Recipe: 2 boxes jiffy corn meal
2 cans creamed corn
1 tub sour cream
1 cup sugar ( we substitute powdered stevia)
4 eggs beaten
Preheat oven to 375°. In glass dish add half a cup of coconut oil and let melt while oven is preheating.

Mix all wet and ingredients together in a bowl. Pour into heated dish with melted coconut oil and bake at 375 for one hour.
Let cool for 1-2 hours.

2. Spinach and Cheese “Pie”

Recipe: 2 packages of frozen chopped spinach
1 tub of cottage cheese
3 eggs beaten
1 package fresh sliced mushrooms
1 can sliced artichoke hearts
2 cups shredded cheddar chesse
Mix all ingredients together, pour into circular pie dish and bake at 425° for one hour.

3. Turkey “Meatball” Muffins

Recipe: 2 cups coarsely chopped zucchini
1 1/2 cups coarsely chopped onions
1 red bell pepper, coarsely chopped
1 pound extra lean ground turkey
1/2 cup uncooked couscous
1 egg
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard

Scoop into muffin tins and bake at 425 for 25 mins. Top with favorite BBQ sauce.

4. Roasted Sweet Potato Bites

Recipe: 5-6 sweet potatoes

Peel and cube sweet potatoes, spray with coconut oil and lay on baking pan. Bake 20-30 mins at 350°. Once cooked, sprinkle with 2 tablespoons cinnamon(optional).

And just because my kid is obsessed with superheroes, and has a sweet tooth like his mama, here’s my all-time favorite recipe for a treat (or heck, a great day after thanksgiving breakfast!)

5. Hulk Smash Muffins

Recipe: One box banana bread mix
1 cup unsweetened almond milk
1 cup fresh spinach
3 eggs whisked
In high-speed blender, blend almond milk and spinach. Add to banana bread mix, and add whisked eggs. Pour into greased muffin 10, and bake at 375 for 15 minutes.
